Meet the Beekeeper

Hello, my name is Rémy, and I have been a beekeeper since 2013. My passion for bees began in childhood, helping a neighbour care for his hives. Those early experiences eventually brought me back to my grandparents’ farm in the Rhône-Alpes region, where they once produced milk and grain.

I am a migratory beekeeper, which means I move my colonies throughout the season to follow the bloom of different nectar-producing plants. The season begins near Lyon and in Isère, continues in the Chartreuse Mountains, and ends in the lavender fields of southern France. This approach allows me to produce a range of distinctive honeys, as well as pollen and propolis.

Every jar is produced with the utmost respect for both the bees and their work. The honey is harvested by hand, cold-extracted immediately after collection, and carefully double-filtered before maturing for around ten days. It is never heated, blended, or altered in any way. What you find in each jar is pure, natural honey, exactly as the bees made it.

 

Although my apiaries are not certified organic, I follow many practices inspired by organic beekeeping. Hive components are protected using natural linseed oil, I use beeswax produced by my own colonies, and organic treatments are applied when necessary. I harvest only the surplus honey from the upper supers, allowing the bees to overwinter primarily on their own reserves.

 

The location of my apiaries is chosen with great care. I work closely with neighbouring farmers, favour sites away from major roads, and seek environments where pesticide use is carefully managed. These choices help ensure the health of my colonies and the quality of the honey they produce.

Propolis and Sweets

Ideal for viral infections and winter chills, propolis tincture is a tried-and-tested home remedy. Propolis and fir sap candies, on the other hand, are made to order with my spring honey.

Gingerbread and pastries

This gingerbread is the result of a collaboration with Piece of Cake in Lyon. Anne uses my lavender honey to create a delicious gingerbread with a wonderfully soft texture and delicate flavour.

 

You can also find a range of other products made with my lavender honey at Piece of Cake, including salted butter caramel, madeleines, bagels and artisanal sandwich bread.
